WHITE PEACH AND ARUGULA SALAD (4 servings)
INGREDIENTS:
1 package Organic Arugula (7oz.)
2 Organic White Peaches
1 package candied walnuts (5oz.)
Fresh Pomegranate seeds
Vegan Feta (recipe on blog)
DIRECTIONS:
Assemble Arugula on 4 salad plates. Slice white peaches in sixths and place on top of arugula. Sprinkle with candied walnuts, pomegranate seeds and vegan feta. Dress with Pomegranate Vinaigrette. Enjoy!

POMEGRANATE VINAIGRETTE
INGREDIENTS:
- 1/2 cup fresh or bottled pomegranate juice
- Scant 1/4 cup red-wine vinegar
- 2 -4 tablespoons agave nectar
- 1/2 cup good olive oil or sunflower oil
- Salt and pepper
- Pomegranate seeds, for garnish
- 1 tablespoon chopped chives, for garnish
