White Peach and Arugula Salad with Pomegranate Vinaigrette

The long warm days of summer often dictate a light and lovely evening meal. We adore salads, crisp and sweet, yet always with a little crunch disguised in the form of  nuts or seeds.Salads tend to be about the combination of fruits and vegetables you use and the wonderful dressings that pull it all together. So keep it light, keep it flavorful and always try to dress your salads with a fresh ingredients. It really makes a world of difference. Enjoy!


WHITE PEACH AND ARUGULA SALAD (4 servings)

INGREDIENTS:

  • 1 package Organic Arugula (7oz.)

  • 2 Organic White Peaches

  • 1 package candied walnuts (5oz.)

  • Fresh Pomegranate seeds

  • Vegan Feta (recipe on blog)

DIRECTIONS:

Assemble Arugula on 4 salad plates. Slice white peaches in sixths and place on top of arugula. Sprinkle with candied walnuts, pomegranate seeds and vegan feta. Dress with Pomegranate Vinaigrette. Enjoy!

POMEGRANATE VINAIGRETTE

INGREDIENTS:

  • 1/2 cup fresh or bottled pomegranate juice
  • Scant 1/4 cup red-wine vinegar
  • 2 -4 tablespoons agave nectar
  • 1/2 cup good olive oil or sunflower oil
  • Salt and pepper
  • Pomegranate seeds, for garnish
  • 1 tablespoon chopped chives, for garnish

DIRECTIONS: 

In a medium bowl, mix the pomegranate juice, vinegar and agave nectar, and let sit for 10 minutes. Whisk in the oil and adjust the seasonings. Mix in pomegranate seeds and chives, if using. Refrigerate until ready to serve. Stir thoroughly
